Weekly Food Finds – June 5th, 2020

“My recipe this week is a wonderful and my all time go-to and favorite Cheesecake with Fresh Strawberry Sauce.
The Cheesecake recipe was given to me many years ago by a close friend in Iowa.  The Strawberry sauce given to me by our own teammate Carly Jones.  Both are very delicious.”  -Ann Pontow

Cheesecake

  • 2 cups crushed graham crackers
  • 2 T sugar
  • 6 T butter – melted
  • 3 (8oz) pkgs cream cheese – softened
  • ½ cup sugar
  • 1 tsp vanilla
  • 3 beaten eggs
  • ½ pint sour cream
  • ½ cup sugar
  • 1 tsp vanilla

Mix graham cracker crumbs, 2 T sugar, 6 T melted butter. Press in 10” spring form pan.

Beat cream cheese, ½ cup sugar, eggs and 1 tsp vanilla until smooth.  Pour into pan and bake 40 minutes at 350 degree’s.  Remove from oven and let stand 10 min.  

Mix sour cream, sugar and vanilla, spread over top and place in oven for an additional 10 minutes.  Let cool.  Spoon fresh or frozen strawberries over and serve.

NOTE:  If you don’t have a 10” spring form pan, you can use a 9” or as my mom always used a 9 x 13 dish.  I personally like to use a spring form pan.

 

Strawberry Sauce

  • 1 to 1 ¼ cups of halved fresh Strawberries
  • ¼ Cup Sugar
  • 1 Lime, zested

Process the strawberries, sugar and lime zest in a food processor or blender until smooth.  Chill for at least 1 hour before serving.  Spoon the sauce over each slice with or without the extra mashed strawberries.

NOTE:  I like to also add about ½ cup of strawberries mashed coarsely when ready to serve with the sauce.
