Berry Angel Food Dessert
“I made this recipe for a friend’s birthday party and it was a HUGE hit! Perfect for a 4th of July Party,” Carly Jones,
Prairie Village associate shares.
Ingredients:
- 1 (10 inch) angel food cake
- 2 (8 ounce) packages cream cheese, softened
- 1 cup white sugar1 (8 ounce) container frozen whipped topping, thawed
- 1 quart fresh strawberries and blueberries, sliced
- 1 (18 ounce) jar strawberry glaze
Directions:
1. Crumble the cake into a 9×13 inch dish.
2. Beat the cream cheese and sugar in a medium bowl until light and fluffy. Fold in whipped topping. Mash the cake down with your hands and spread the cream cheese mixture over the cake.
3. In a bowl, combine strawberries and glaze until strawberries are evenly coated. Spread over cream cheese layer. Layer until to the top. 4.Chill until serving.
Spiced Chicken with Melon Salsa Recipe
Both sweet and spicy, this summery entree can be
grilled or broiled. It’s nutritious and delicious.
Ingredients:

1/4 teaspoon salt

1/4 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/8 to 1/4 teaspoon crushed red pepper flakes

2 boneless skinless chicken breast halves (5 ounces each)
SALSA:

1/3 cup each diced cantaloupe, honeydew and watermelon

2 tablespoons diced celery
-
1 green onion, finely chopped
-
2 teaspoons minced fresh mint or 1/4 teaspoon dried mint

2 teaspoons chopped crystallized ginger
-
2 teaspoons lime juice
-
2 teaspoons honey
-
1/4 teaspoon grated lime peel
Directions:
In a small bowl, combine the salt, ginger, nutmeg and pepper flakes; rub over chicken.
Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill, covered, over medium heat or broil 6 in. from the heat for 6 minutes on each side or until a thermometer reads 170°.
Meanwhile, in a small bowl, combine the salsa ingredients. Serve with chicken.
French Watermelon
Simple but tasty summertime recipe.

1 large watermelon, cubed

1 cup vodka

1/2 cup white sugar

15 fresh mint leaves, chopped
Toss the watermelon, vodka, sugar, and mint together in a large bowl. Cover the bowl with plastic and refrigerate 1 to 2 hours.

Cucumber Watermelon Salad
This combination is sweet and tangy and oh so refershing.
Great use for the fruits of your garden.
- 6 cups cubed seeded watermelon
- 4 cups cubed cucumber
- 1 t salt
- 1 t white sugar
- 1/2 cup balsamic vinegar
Place the watermelon and cucumber cubes in a bowl. Gently toss with the salt and sugar. Drizzle with balsamic vinegar and toss to coat. Refrigerate for 15 minutes, then gently toss one last time before serving.
