Weekly Food Finds – September 20th, 2019

Crab Cakes

  • 4 Green Onions – sliced
  • 1/3 cup mayonnaise
  • 1 egg lightly beaten
  • 1-2 teaspoon capers
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon Dijon mustard
  • 1 lb  crab meat ( I use 4 cans)
  • 1 – 1 ½ cups bread crumbs
  • 1 Tablespoon butter
  • 1 Tablespoon oil

Stir together first 6 ingredients in a large bowl, gently fold in crab meat & bread crumbs. Shape into 10 patties.

Heat ½ tablespoon butter & ½ tablespoon oil in large non stick skillet over medium-high heat. Cook 5 patties 4 min on each side – drain on paper towel.  Repeat with remaining butter, oil and 5 patties.

Spinach- Strawberry Salad

  • 2 Bunches of Fresh Spinach – Rinsed
  • 2 cups Sliced Fresh Strawberries
  • Dressing:
  •   2 Tablespoons sesame seeds
  •   ½ cup sugar
  •   1 Tablespoon Poppy Seeds
  •   1 ½ teaspoon minced onion
  •   ¼ teaspoon paprika
  •   ½ cup veg. oil
  •   ¼ cup cider vinegar

Toss the spinach with the dressing and then add the strawberries.
