Weekly Food Finds – December 13th, 2019

Chicken Fiesta Corn Chowder

  • 3 tablespoons flour
  • 1 pkg Fajita seasoning
  • 4 Skinned & boned Chicken Breast-cubed
  • 3 Tablespoon oil
  • 1 Med onion – chopped
  • 1 Teaspoon minced garlic
  • 1 – 14-15oz can whole kernel corn with peppers – drained
  • 1 – 14-15 oz can black beans – rinsed & drained
  • 1 – 14-15oz can Mexican stewed tomatoes ( May use stewed tomatoes with peppers)
  • 1 can chopped green chiles
  • 3 cups water
  • 1 cup uncooked instant brown rice
  • 1 – 2 ½ oz can sliced black olives
  • 1 can Nacho Soup
  • 3 Tablespoon Cilanto ( I do not use)
  • 1 Tablespoon Lime Juice

Combine flour & 2 Tablespoons of the fajita seasoning in a ziplock baggie.  Add Chicken & Coat.  Brown Chicken in a soup pot.   Reduce heat, and add garlic & saute.  Stir in rest of seasoning packet, corn and next 5 ingredients.  Bring to a boil-Cover & reduce heat & simmer 5-10 minutes.  Remove lid and add nacho soup, cilantro & lime juice.  Simmer until hot and ready to serve.
