Curried Ham & Mushroom Soup

Serves:  4-6

  • 2 Tablespoons butter
  • 1 cup sliced carrots
  • 1 cup chopped onions
  • 1 lb fresh white mushrooms, sliced
  • 4-5 Teaspoons curry powder
  • 8 oz smoked ham- diced
  • 2 – 13 ¾ oz chicken broth
  • 1 – 14 ½ oz stewed tomatoes
  • ½ cup quick cooking barley

Directions:

In large saucepan melt butter, add carrots and onion.  Cook until crisp, about 5 minutes.  Add mushrooms, cook until tender – 5 minutes.  Add ham and curry powder.  Cook until fragrant, approximately 30-60 seconds. Stir in chicken broth, tomatoes and barley.  Bring to a boil and simmer 10-15 minutes.
