In honor of Mother’s Day I am submitting a recipe from my mom’s archives.  This is a main dish recipe and easy to make.  Serve with a fresh vegetable or salad.   I do not know how old this recipe is or where she found it, but it’s a favorite!  – Ann Pontow

CHICKEN –MACARONI CASSEROLE

Ingredients:

  • 1 ½ cups UNCOOKED elbow macaroni (about 5 oz)
  • 1 cup shredded Cheddar cheese
  • 1 ½ cups diced cooked chicken or turkey
  • 1 can mushroom stems and pieces, drained or 12 oz of fresh mushrooms , coarsely chopped
  • ¼ cup chopped pimento
  • ¼ cup diced red pepper
  • 1 can (10 ½ oz) condensed cream of chicken soup
  • 1 1/4 cup milk
  • ½ teaspoon salt
  • ½ teaspoon curry powder

Directions:

Heat oven to 350°.  Stir together all ingredients; pour into un-greased 1 ½ – 2 qt casserole.  Cover; bake 1 hour.
