Crab Cakes
- 4 Green onions – sliced
- 1/3 Cup mayonnaise
- 1 Egg – lightly beaten
- 1-2 Teaspoons of capers
- 1 Teaspoon Cajun seasoning
- 1 Teaspoon Dijon mustard
- 1 lb crab meat – (I use 4 cans)
- ½ Cups bread crumbs
- 1 Tablespoon butter
- 1 Tablespoon Olive Oil
Directions:
Stir together first 6 ingredients in a large bowl, gently fold in crab meat and bread crumbs. Shape into 10 patties.
Heat ½ tablespoon butter & ½ tablespoon of olive oil in large non-stick skillet over medium-high heat. Cook 5 patties 4 minutes on each side, drain on paper towel. Repeat with the remaining butter, olive oil and 5 patties. Drain on paper towel.
Serve with your favorite side dish!
