This recipe does not have measurements. It depends on the size of the pan you are using. With the seasonings I just sprinkle on top of each layer. I just layer each ingredient as I like.
Spray a 9 x13 casserole dish or smaller depending on how many people you are serving
- Rice (Original NOT Instant)
- Zucchini – Sliced
- Salt & Pepper
- Oregano, Garlic, Fresh Basil
- Bacon – cut up in smaller pieces – UNCOOKED
- Tomatoes – Petite Diced (Do Not drain), (I have added a little water ( ½ cup)).
- Red Pepper – Diced
- Onion – Diced
- Shredded Cheese
Cover bottom generously with rice. Layer Zucchini, tomatoes, onions and peppers (in this order). Season with salt, pepper, oregano, garlic and basil. Layer with shredded cheese, then layer of chopped bacon. Keep layering (except for rice) until you have filled the pan. Cover with foil until the last 15-20 minutes. Remove foil to crisp up bacon. Bake 350 degrees about an hour or more depending on the size of your pan.
