Weekly Food Finds – October 30th, 2020

Pumpkin Bars

  • 2 cups sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 2 cups pumpkin
  • 2 cup flour
  • 1 teaspoon of each: cinnamon, baking soda, salt and vanilla
  • 2 teaspoons of baking powder

Frosting:

  • 1 – 3oz bar cream cheese (softened)
  • ¼ teaspoon vanilla
  • ¾ stick of butter (softened)
  • 1 tablespoon milk
  • 3 cups powdered sugar

Mix the pumpkin bar ingredients together and pour in a 17 x 11 x1 pan or if you have a jelly roll pan (15 x 11 x 1) it will work also.  Bake @ 350° for 20-25 minutes.  Cool completely.

Mix the cream cheese and butter til blended.  Add the vanilla, powdered sugar and milk.  Mix to a spreadable consistency.  Spread on cooled bars.  Cut in 2” squares.

This recipe makes a lot, enough to share with friends.  Enjoy!!
