Pumpkin Bars
- 2 cups sugar
- 1 cup vegetable oil
- 4 eggs
- 2 cups pumpkin
- 2 cup flour
- 1 teaspoon of each: cinnamon, baking soda, salt and vanilla
- 2 teaspoons of baking powder
Frosting:
- 1 – 3oz bar cream cheese (softened)
- ¼ teaspoon vanilla
- ¾ stick of butter (softened)
- 1 tablespoon milk
- 3 cups powdered sugar
Mix the pumpkin bar ingredients together and pour in a 17 x 11 x1 pan or if you have a jelly roll pan (15 x 11 x 1) it will work also. Bake @ 350° for 20-25 minutes. Cool completely.
Mix the cream cheese and butter til blended. Add the vanilla, powdered sugar and milk. Mix to a spreadable consistency. Spread on cooled bars. Cut in 2” squares.
