Cajun Pot Roast – Slow Cooker
- 2 lbs boneless arm or chuck roast
- 1 Tablespoon Cajun seasoning (I use Slap Your Mama or use one you prefer)
- 1 pkg (9-10oz) bag frozen corn (no need to thaw)
- ½ cup chopped onion
- ½ cup chopped bell pepper
- 1 can (14.5oz) diced tomatoes (do not drain)
- 1/8 teaspoon pepper
- ½ teaspoon salt
- 1 teaspoon Pickapeppa Sauce
Directions:
Rub entire surface (both sides) of the meat with the Cajun seasoning. Place roast in slow cooker. Top with corn, onion and bell pepper.
In small bowl, combine tomatoes, salt & pepper, Pickapeppa Sauce; mix well. Pour over vegetables and roast. Cook on low 8 – 10 hours.
Serve this over noodles or you can put the meat in flour tortilla shells.

Enchilada Meatballs – Low Carb
Servings: 5
Ingredients:
Meatballs:
- 1 lb ground beef
- 1 egg
- ¼ cup grated cheddar cheese
- 2 Tablespoon taco seasoning
- ½ teaspoon onion powder
- ½ teaspoon black pepper
Casserole:
- 1 10oz can red enchilada sauce
- 3 ¼ cup shredded Mexican cheese
Directions for Meatballs:
Preheat oven to 400 degrees.
Add all of the meatball ingredients into a large bowl and mix well until combined.
Shape into approximately 15 meatballs and place on a baking sheet lined with aluminum foil.
Bake for 25 minutes or until cooked through.
Casserole Assembly:
Preheat oven to 350 degrees. Pour ¼ cup enchilada sauce into bottom of small baking dish or cast iron skillet.
Place cooked meatballs into dish and top with remaining enchilada sauce. Top with Shredded cheese.
Bake 15 minutes or until cheese is melted and bubbly.
